The noodles are made by the ‘multi-water aging’ method, where the noodles are kneaded with plenty of water and then aged for a long time before being pulled out, giving them a fine, chewy yet tender flavour. The noodles have a good bite and go well with any sauce. Unlike regular raw noodles, the noodles are boiled once and then flash-frozen, so they can be defrosted and used immediately.
